Sparkling and mineral waters range from naturally effervescent spring water to filtered water with added carbonation. Natural mineral water comes from underground sources and contains dissolved minerals — calcium, magnesium, bicarbonate, and others — that give each brand its distinctive taste. Sparkling water, more broadly, is simply water with carbon dioxide added for fizz.

In Australia, sparkling water has become a pantry staple, used as a mixer for drinks, a refreshing alternative to soft drinks, and a base for homemade sodas with a squeeze of citrus. Brands vary considerably in mineral content and carbonation level, from aggressively fizzy to gently sparkling.

Still mineral water is also included in this category — sourced from the same underground springs but without carbonation. The appeal is the clean taste and mineral profile rather than the bubbles.

How it's made

Natural mineral water is drawn from protected underground aquifers or springs where it has accumulated dissolved minerals over time. It is bottled at the source with minimal treatment — filtration to remove particulates is allowed, but the mineral composition must remain as it occurs naturally. For sparkling varieties, carbon dioxide is injected under pressure during bottling, or in rare cases the water emerges naturally carbonated from the source. Standard sparkling water is produced by carbonating filtered or purified tap water.
