Ice pops — known variously as icy poles, ice blocks, or freezer pops in Australia — are frozen confections made by freezing flavoured, sweetened liquid into moulds, often around a wooden stick. They are pure simplicity: water, sugar, flavouring, and colour, frozen solid.

They are a quintessential Australian summer treat, found in every corner shop freezer and home freezer alike. Commercial varieties range from basic sugar-water pops to those made with real fruit juice or purée. Italian ice (granita-style) is a slightly more sophisticated cousin — scraped or churned during freezing to produce a coarser, icier texture.

Homemade ice blocks are easy to prepare with moulds and whatever juice, cordial, or puréed fruit you have on hand. They freeze well and are a good way to use up overripe fruit.

How it's made

Ice pops are made by dissolving sugar in water, adding flavourings (fruit juice, cordial, or artificial flavours) and colour, then pouring the mixture into moulds with inserted sticks. The moulds are placed in a blast freezer until solid. Commercial production uses continuous freezing lines that fill, insert sticks, freeze, and demould at high speed. Italian ice follows a similar process but is agitated during freezing to create a granular texture.
