Coconut Milk & Beverages

part of: Coconut Palm

Coconut milk beverage is a dilute, drinkable form of coconut milk designed as a dairy-free alternative to cow’s milk. This version has added calcium to bring its mineral content closer to that of dairy milk, making it a more complete substitute for those avoiding dairy.

It has a light coconut flavour and a thinner consistency than the canned coconut milk used in cooking. In Australia, it sits alongside oat, soy, and almond milks in the chilled and long-life sections of supermarkets, and is used in cereal, coffee, smoothies, and on its own.

Coconut milk beverages are naturally free from lactose, soy, and gluten, making them suitable for people with multiple food sensitivities. The flavour is mild enough to use in most contexts where you would use dairy milk.

How it's made

Mature coconut flesh is pressed to extract coconut cream, which is then diluted with filtered water to achieve a drinkable consistency. Calcium (typically as calcium carbonate or tricalcium phosphate) is added along with stabilisers and emulsifiers to keep the mixture from separating. The beverage is homogenised and heat-treated (UHT or pasteurised) before packaging.
