Cherry Pie & Fillings

Cherry pie is a classic baked dessert featuring a pastry crust filled with cherries that have been sweetened and thickened. It’s one of the most traditional fruit pies, typically made with sour (Morello) cherries rather than sweet eating varieties, as the tartness balances well against the added sugar.

Commercially prepared cherry pies are sold as whole frozen pies, individual pie slices, or as canned cherry pie filling ready to be poured into a homemade crust. The canned fillings are also used as toppings for cheesecakes, ice cream, and other desserts.

The filling’s characteristic deep red colour and glossy, syrupy texture come from the combination of cherry juice, sugar, and a starch thickener — usually modified tapioca or cornflour.

Cherries (typically sour varieties) are pitted, mixed with sugar, thickeners like modified starch, and sometimes a small amount of citric acid for tartness. For whole pies, this filling is enclosed in a shortcrust or flaky pastry shell, topped with a second crust or lattice, and baked in commercial ovens. For canned fillings, the cherry mixture is cooked, sealed in cans, and heat-processed for shelf stability.
