Red Yeast

Red yeast refers to the mould Monascus purpureus, which is cultivated on rice to produce red yeast rice (hóng qū in Chinese). Despite the name, it is a filamentous fungus rather than a true yeast. The mould produces deep red pigments that have been used in Chinese cooking and food production for over a thousand years.

Red yeast rice is used as a natural food colourant and flavouring agent, most notably in Fujian-style red wine lees, fermented tofu, Peking duck glazes, and char siu (barbecued pork). It gives a distinctive reddish colour and a mild, slightly sweet, earthy flavour. In powdered or paste form, it is used across East and Southeast Asian cuisines.

Red yeast rice is available in some Asian grocery stores in Australia, typically as a dried powder or as fermented rice grains. It is also known for naturally producing monacolin K, a compound identical to the active ingredient in some cholesterol-lowering medications, which has led to regulatory attention in some markets.

How it's produced

Red yeast rice is produced by inoculating steamed rice with spores of Monascus purpureus and allowing the mould to grow under controlled conditions of temperature and humidity. Over several days, the mould colonises the rice grains, turning them deep red throughout.

Traditionally, this was a small-scale artisanal process, but modern production is largely industrialised, particularly in China and Taiwan. After fermentation is complete, the colonised rice is dried and either sold as whole grains, ground into powder, or processed into a paste. The process is essentially a solid-state fermentation — similar in principle to koji production, but using a different organism and producing different compounds.
