Pistachios are the seeds of a small desert tree (Pistacia vera) native to Central Asia and the Middle East. They are one of the oldest known nut crops, with evidence of consumption dating back thousands of years in the region that is now Iran and Turkey.
The nut is distinctive for its naturally split shell, which opens as the seed matures — a trait that makes them uniquely easy to eat compared to other tree nuts. The kernel inside is characteristically green, with a flavour that balances sweetness, earthiness, and a slight resinous quality.
Pistachios are eaten as a snack (roasted, salted, or plain), used in confections like baklava and halva, and increasingly found in ice cream, gelato, and baked goods. In Australia, pistachios are widely available and are also grown domestically, particularly in the Riverina region of New South Wales and parts of South Australia.
How it's produced
Pistachio trees are grown in arid and semi-arid climates with hot summers and cold winters — the trees need winter chill to produce well. Orchards take seven to ten years to reach full production and trees can remain productive for over a century.
Pistachios are harvested mechanically by shaking the trees, and the nuts are immediately processed to remove the fleshy outer hull and dry the shells. Speed is important at harvest — delays can cause shell staining and quality loss. Iran and the United States (mainly California) are the world’s largest producers, with significant production also in Turkey and Syria. Australia’s domestic pistachio industry is small but growing.
