Honeybee

The honeybee (Apis mellifera) is one of the most widely managed insects in the world, kept primarily for its ability to produce honey from flower nectar. Colonies are highly organised, with worker bees collecting nectar, converting it to honey through enzymatic processes and evaporation, and storing it in wax comb cells within the hive.

Honeybees have been central to human food systems for millennia, both as a source of sweetener and as the world’s most important managed pollinator. Wild and semi-wild honeybee populations exist alongside managed hives in many regions, though commercial honey production relies almost entirely on beekeeping.

In Australia, the honeybee industry produces a wide range of honey varieties, with flavour and colour determined largely by the floral source. Eucalyptus honeys are particularly characteristic of Australian production. The industry faces ongoing challenges from habitat loss, pesticide exposure, and the threat of Varroa mite incursion.

How it's produced

Honeybees are raised in managed hive systems where beekeepers provide housing (hive boxes with removable frames) and monitor colony health. Bees forage freely on available flowers, and beekeepers may relocate hives to areas with active blooms. Honey is harvested periodically by removing full frames, uncapping the wax-sealed cells, and spinning the honey out in an extractor.

The harvested honey is strained to remove wax particles and bottled. Some producers heat honey lightly to slow crystallisation, while others sell it raw. Australian honey production ranges from large commercial operations with thousands of hives to small-scale producers with a handful.
