Fusarium Venenatum

Fusarium venenatum is a species of filamentous fungus originally isolated from a soil sample in Buckinghamshire, England, in the 1960s. It was identified during a systematic search for microorganisms that could be grown as a protein source for human food — a project driven by concerns about future global protein shortages.

The fungus produces dense mats of mycelium (thread-like fungal fibres) that have a naturally meat-like texture when processed. This mycelium is the basis of mycoprotein, sold commercially under the Quorn brand since the 1980s. The fibrous structure of the mycelium gives it a texture closer to meat than most plant-based protein alternatives.

Mycoprotein from Fusarium venenatum has become a significant player in the alternative protein market. It’s high in protein, contains dietary fibre (from the fungal cell walls), and is produced with substantially lower greenhouse gas emissions than most animal proteins. The product is sold in Australia and many other countries in various forms — mince, pieces, fillets, and ready meals.

How it's produced

Fusarium venenatum is grown in large industrial fermenters using a continuous fermentation process. The fungus is fed a liquid growth medium based on glucose syrup (typically derived from wheat or corn starch), along with nitrogen sources, vitamins, and minerals. Air is pumped through the fermenter to supply oxygen, and the temperature and pH are carefully controlled.

The fungus grows rapidly, doubling its biomass roughly every five hours. The harvested mycelium is heat-treated to reduce its RNA content (which is naturally high in fast-growing organisms), then drained and frozen. This raw mycoprotein is then textured, flavoured, and shaped into various food products. The entire process takes place in enclosed facilities and is not dependent on agricultural land, weather, or seasons — making it one of the more controlled and efficient protein production systems available.
