Cinchona

Cinchona is a genus of trees native to the Andes mountains of South America, historically one of the most important medicinal plants in the world. The bark of several Cinchona species contains quinine, an alkaloid that was for centuries the only effective treatment for malaria. This made cinchona bark one of the most sought-after commodities of the colonial era.

Today, cinchona bark’s primary food-related use is as the source of quinine flavouring in tonic water and bitter lemon drinks. The intensely bitter taste of quinine gives tonic water its characteristic flavour, which pairs distinctively with gin and other spirits. Modern tonic waters use either natural quinine extract or synthetic quinine, with the natural product commanding a premium.

The history of cinchona is intertwined with colonialism, global health, and botanical espionage — seeds were smuggled out of South America by European powers in the 19th century to establish plantations in their tropical colonies.

How it's produced

Cinchona trees are grown in tropical highland regions, typically at elevations between 1,000 and 3,000 metres where temperatures are cool and rainfall is high. The trees take several years to mature before their bark can be harvested. Bark harvesting can be done by stripping sections from the trunk and branches, after which the bark regrows over time, or by coppicing — cutting the tree and harvesting bark from the regrown shoots.

Historically, wild cinchona trees in the Andes were the sole source, but colonial-era plantations in Indonesia (Java), India, and Central Africa became the dominant producers from the late 19th century onward. Today, the Democratic Republic of Congo and Indonesia remain significant producers. The harvested bark is dried, milled, and processed to extract quinine and other alkaloids for use in pharmaceuticals and the beverage industry.
